A favorite Meal we are having tonight. My Southern grandmothers Recipe.
Chicken and Dumplins
1 whole chicken
1 1/2 t. salt
2 c. flour (self rising)
1/3 c oil
1/2 c milk
1 t pepper
Cover chicken with water, add salt and cook (simmering) for about 3 hours until meat is tender and just about falling off the bone. Remove chicken from the broth and set aside. Leave broth simmering. Debone the chicken.
Sift together flour, salt and pepper, and oil. Add milk to make a stiff dough. Roll onto a floured board and cut into 1 inch squares. drop squares into briskly boiling broth. Cook until dumplins are plump and tender (about 15 to 20 minutes.) Add chicken and serve.
