Today's Celebrations and a recipe

Today is "National Waffle Day"




Homemade Waffles

1 c. Bisquik
1/2 t vanilla
1 T sugar
1 egg
1/3 c water

Mix all together and put in waffle iron!  tada, very easy

Today is........

Today is National Crown Roast of Pork Day..... well... I have never cooked nor can I afford a crown roast... so I just cooked a roast. A delicious roast! I saw this recipe on someone's Menu Monday last week and forgot to write down who it belongs to, so if it's yours please comment so I can give you credit.

Slow Cooker Roast

1 pork roast
1 bottle Catalina french dressing
1 onion, chopped

Brown roast ( I did not do this, as you know, I am forgetful) and it turned out fine.
Place in slow cooker.
Pour dressing over roast and add onion.
Cook on low til done ( about 4-5 hrs)

Today is........

Today is National Pig day.

Some people may think of Porky the Pig today... me, I think of .....

TASTY PORK CHOPS AND RICE

5-6 pork chops
season all (or seasoning to your taste)
worcestershire sauce
1 can cream of chicken soup
4 oz tomatoe sauce (1/2 of an 8 oz can)
1 beef bouillon cube
2 cups boiling water
3/4 cup uncooked rice

In large skillet brown the pork chops, covering them with Season-All to taste and Worcestershire sauce (I use the tines of a fork to pierce the chops so the sauce soaks through).

While chops are browning, dissolve the beef cube in the boiling water. In a bowl, mix with the remaining ingredients.

Remove chops from the skillet and set aside. Turn the heat down to low. Pour the rice mixture into the skillet; place the chops on top.

Cover the skillet with a lid, immer on low heat 45 minutes, or until done.

During the cooking, add water as needed to keep the mixture from drying out. When the rice is done and the chops are tender, serve.

Today is also National Peanut Butter Lovers day.

To honor that, here is a recipe we love:

Peanut Butter Cookies

1 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
1 cup peanut butter
2 cups all purpose flour
1/2 teaspoon salt
2 teaspoons baking soda
1 cup oats

Preheat oven to 350°F (175°C).

Cream together shortening and sugars (butter may be used as the shortening but cookies will spread more and brown more quickly).

Add eggs and beat well. Mix in peanut butter. Mix together flour, salt, baking soda and add to the creamed sugar mixture. Mix well.

Stir in oats. Form dough into 1 inch balls and place on cookie sheets. Flatten with a glass or the tines of a fork.

Bake for 12 minutes at 350°F (slightly underbaked is better than overbaked - so watch carefully or cookies will be dry).

Today is.....

Michael Bolton's Birthday. He is 57.
Today is my Sophie girl's birthday. She is 2 months old today!


Today is also Cookie Friday. Just made these yummy treats.

No Bake cookies

2 cups sugar
1/2 cup cocoa
1 stick butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter

Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.

Remove from heat. Stir in peanut butter ,vanilla and oatmeal.

Drop by spoonful onto wax paper. Let cool for at least 30 minutes.

Celebrity birthdays for the 25th.... and Chili!

Barry Bostwick is 65 today.

Today is National Chili day. In honor of that..... here is my own very simple chili recipe.

Sandy's Easy Shortcut Chili

1 pd ground beef
1 small onion, diced
2 cans kidney beans
1 pkg chili mix
1 T chili powder
salt and pepper to taste
1 can diced tomatoes
1 small can tomato sauce
1 can tomato soup (+ 1 can water)
1 can drained whole kernel corn

Brown meat and onion together. Drain.
Add everything else in a big pot. Bring to a boil.
Simmer 30 minutes.

We have this at least twice a month. Yummy!

National Dog Biscuit Day

It won't be long until Sophie's teeth will be strong enough for dog biscuits. In honor of "National Dog Biscuit day", here are a few recipes I used to make for my last dog Buck. They are easy and good.

This one makes about 80 bones and they can be stored for about three months. -

3 c. all purpose flour
3 c. cornmeal
1 1/2 c. oats
2/3 c. non-fat dry milk
pinch of garlic powder
2 tsp. salt
3 1/2 c. beef broth
1 c. vegetable oil
2 lg. eggs

Glaze:
1 lg egg beaten with 1 tbsp. Worcestershire sauce
Position oven racks to divide oven in thirds. Heat oven to 300°F. Have 2 cookie sheets ready.
Mix flours, cornmeal, oatmeal, bone meal powder, garlic powder and salt in a large bowl. Whisk beef broth, oil, and the 2 eggs in a medium size bowl.
Stir broth mixture into flour mixture with a wooden spoon until blended and a soft dough forms.
On floured surface with floured rolling pin, roll out dough to 1/2 inch thickness. Cut in dog bone biscuit shapes (or any shape desired) with floured cutter or with floured card board pattern. Pale 1/2 inch apart on ungreased cookie sheets. Re-roll and cut scraps.
With a toothpick prick a line of dots down centers, if desired. Brush tops and sides of biscuits with the glaze.
Bake 2 cookie sheets at a time for 2 hours. Turn off oven and leave biscuit in 1-2 hours to dry and harden. Store, covered at room temperature up to 3 months.
Makes 80 4-inch biscuits or one hundred twenty 2 1/2 inch biscuits.

1 pkg. active dry yeast
1 c. warm chicken broth
2 tbsp. molasses
1 3/4 to 2 c. all purpose flour
1 1/2 c. whole wheat flour
1 c. cracked wheat
1/2 c. cornmeal
2 tsp. salt
2 tsp. garlic powder
1/2 c. non-fat dry milk powder
1 beaten egg
1 tbsp. milk

Dissolve yeast in 1/4 cup warm water (110-115 degrees). Stir in broth and molasses. Add 1 cup all purpose flour and the wheat flour, cracked wheat, cornmeal, salt, garlic, and milk powder. Mix well. On a floured surface, knead in remaining flour. Roll out, a half at a time, to approximately 3/8 inch thick. Cut with a dog bone cookie cutter or just cut into rectangles. Place on an ungreased cookie sheet. Mix egg and milk and brush on tops of dog biscuits. Bake at 300 degrees for 45 minutes. Let dry overnight in oven or on counter top.

Today is "Cherry Pie Day"



In honor of "Cherry Pie Day", here is my version of cherry pie recipe.



CHERRY TOPPED EASY PIE

Graham crackers
1 pkg. instant vanilla pudding
2 c. cold milk
1 c. Cool Whip
1 can cherry pie filling

Line 9 inch square pan with crackers. Combine pudding mix and milk in mixer until well blended. (2 minutes). Let stand 5 minutes. Blend in Cool Whip. Spread half pudding mixture on crackers. Add another layer of crackers and remaining pudding. Top with cherry pie filling. Chill 3 hours

TODAY is "National Chocolate Cake Day"

CHOCOLATE PUDDING CAKE
2 tablespoons butter, melted
1 cup sugar
1 tsp. vanilla
2/3 cup sifted flour
1/2 cup unsweetened cocoa
1 tsp. baking powder
3/4 tsp. salt
1/2 cup milk
1/2 cup quick cooking oatmeal
1 2/3 cups boiling water

Cake and sauce bake together in one pan to make a cake-like topping with a saucy chocolate base.

In a bowl combine butter, 1/2 cup sugar and vanilla. Sift together flour, 1/4 cup cocoa, baking powder and 1/2 teaspoon salt; add with milk to sugar mixture.
Blend well. Stir in oats.

In an 8-inch square cake pan, combine the remaining half cup of sugar, remaining 1/4 cup of cocoa, and the remaining 1/4 teaspoon salt in the boiling water.

Drop oat mixture by tablespoons onto cocoa mixture in pan.

Bake in a preheated 350°F oven for about 45 minutes.

Serve warm, spooning chocolate sauce from pan over each portion.

Serve warm, topped with vanilla ice cream or Cool Whip.

Makes 6 servings.

Today is "National Blonde Brownie Day"

BLONDE BROWNIES

1/4 c. butter
1 c. packed golden brown sugar
3/4 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 lg. egg
1/2 tsp. vanilla
1 1/3 c. walnut or pecan pieces

Preheat oven to 350 (340 for glass) 8x8 pan, greased. Melt butter over low heat in a medium saucepan. Stir in sugar and mix well. Cool slightly. Combine flour, baking powder and salt - set aside.

In a medium bowl beat egg and vanilla together. Add brown sugar mixture, blend thoroughly. Stir in flour mixture. Stir in nuts. Spread batter in greased pan. Bake 25 minutes. Top will be slightly puffed and a toothpick inserted 1 inch from center will come out barely moist. Cool in pan on rack completely before cutting.

My hubby LOVES these. Simple and easy to make.

Saturday Photo Hunt and a recipe

I love this photo. I was sitting in the car downtown one day and this pigeon came walking by like he was showing off to the duck in the picture in the window.

I found a recipe for Potato Corn Chowder over at Temma's blog Honey Never Spoils . It was fantastic! My hubby and I both ate two bowls for lunch. Please go over to her blog and try this! You will be glad you did.

Headache, 30 Giving Challenge, and a Recipe

I have had a terrible headache all day, then had to deal with the government (Social Security and the IRS)....UGH!!! Just getting a simple question answered takes forever and then they are rude! Bad day in general.

30 DAY GIVING CHALLENGE - DAY 3
Since I have had a bad day, my gifts was to both of my grown sons in the form of a phone call to give them some encouragement. One has job problems and the other has the flu.Tomorrow will be a better day for all of us.

My family loves this recipe. I found it on Kates blog several months ago and we Love it! I personally leave out the carrots but that is up to you.

Unstuffed Pepper Skillet Dinner

1 pound ground beef
1/2 onion, diced
2 carrots, diced
2-3 large green peppers, cut into chunks
Salt & pepper, to taste
1 15 oz. can tomato sauce
1/3 c. water
1 t. Italian seasoning
1/2 t. cumin
2 1/2 c. fully cooked rice

1. Brown ground beef and onions n a large skillet. Drain. Add carrots and green peppers. Season with salt and pepper to taste. Cook for 2-3 minutes. You want the peppers to stay somewhat crunchy.
2. Stir in tomato sauce, water, Italian seasoning and cumin. Bring to a slow boil, reduce heat and simmer for 10-15 minutes.
3. Stir in cooked rice until heated through. Top with shredded mozzarella cheese. Serve and enjoy. (Or refrigerate and reheat in oven or microwave just before serving.)
Leftovers of this work great as a burrito filling. Add some chili powder, more cumin and cayenne pepper, roll up in a tortilla and you’re all set.

Recipe Traders Sunday meme

Butterfinger Cake


1 box devil’s food cake mix
1 bottle caramel topping
1 can Condensed milk
1 large tub cool whip
1 Butterfinger bar


Prepare cake according to package directions. Immediately after removing cake from oven, poke several holes all over the top with a fork. Mix sweetened condensed milk and caramel together, pour over hot cake, spread it over the entire cake. Chill well. After cake has chilled completely, spread cool whip over the top and sprinkle crushed Butterfinger bar on top of cool whip

This cake is the best tasting cake I've ever had..I love it!!!!
